Wild Game Meats
My family our hunters. I occasionnally would cook elk or deer. This past week my sons gave me tons of whitetail and cow elk meat. Talk of about lean meat this is the best I've seen. My question is how do others cook and prepare these meats? My husband likes it fried but I hate to fried it because it takes away from the leaness.
I love the whitetail patties kinda like hamburger. Yes ,we have made lots of jerky some with red chili(new mexico style), salt/pepper, I make my own tererkyi minus the sugar.

Add pork sausage
Down here in the south we grind deer with pork sausage to add a little fat.....We make sausage, etc. with this great concoction.....I know it adds more calories but......

we do the same
one of my sons is a taxidermist/wild game processor) makes the breakfast sausage also in fact I am eating a egg white veggie omlet with some. .He also make summer sausage which I will have a piece or two for a snack. Thanks donnasim. At least we can control the amount of fat we choice to put into it.

I love wild game but the wife doesn't. So I go to Paul and he feeds me my wild game. Elk and Bison are my favourite but I do enjoy all.

CT cow elk is very good. It doesn't have the gamy taste. Now I will not eat the bull elk meat because that does have that taste- all that darn testestone. Also it depends who is cooking it.
