Toast the bread

Mash the avocado and smear 1/2 on each toast

Bring 8 cups of water to a boil in a shallow 12 inch straight sided frying pan. Lower the heat to a gentle simmer. Add vinegar and salt and stir till combined. Crack two eggs into a bowl then position the bowl just above the water then tilt in a single motion and gently pour the eggs into the water. Allow the eggs to sit undisturbed for a moment until the whites are milky. Gently move the eggs around the pan with a spoon until they have cooked through (I cook them for two minutes) then gently remove the eggs with a slotted spoon and set on top of the avocado toast.
