Description: Low carb "peanut" butter cups made with coconut oil and almond butter. NOT low calorie, but low carb.
Ingredients:  Makes 16 servings
2  cups
 
5  tablespoons
 
3  teaspoons
 
4  packets
 
1/3  cup

Directions:

Melt the coconut oil if needed

Mix in the cocoa, stevia (see below) and vanilla

Add about 1/8 inch of the oil mixture to your cups (I use silicone mini muffin type things)

Freeze these for 15 mins

Add a couple tsp of the almond butter to each cup

Add remaining oil mixture to the tops of each cup - covering the almond butter.

Freeze for another 15 mins

Keep in the freezer or fridge.

(I use 4 TBSP of Stevia - not totally sure how it relates to a "packet")
