Description: I am a pescetarian so I make this sauce at least once a month in a giant batch to use and freeze.

Directions:  
I cut up and caramelize the onions in a pan with oil. Then I cut up the eggplant, fresh tomatoes (zucchini) and garlic and saute them in a separate pan. Then I add the dry spices to the eggplant pan. Then I pour the eggplant ingredients into the caramelized onion pan and add all tomato and sauce ingredients and simmer for about 20-30 minutes while the pasta is cooking.
