Fresh Summer Salsa

1		Red Bell Pepper, diced
1		Green Bell Pepper (Or Yellow/Orange), diced
15  ounces		Sweet Corn, drained (can also be fresh or frozen)
15  ounces		Black Beans, drained and rinsed
1		medium red onion, diced
1  cup		avocado, peeled and cubed
1  teaspoon		Chili powder
1  teaspoon		Cumin
2  tablespoons		Olive Oil
1  cup		Lime Juice
2  tablespoons		Garlic - Minced
1  cup		Cilantro - Fresh, Chopped

Mix the peppers, corn, beans, and onion in a large bowl. Add the cilantro, lime juice, olive oil and spices; Mix well. Carefully stir in the avocado and serve chilled. You can make this ahead of time, but I’d recommend adding the avocado at the last moment.

This sweet and spicy cold salsa goes well with tacos, fajitas, chips, or just by itself! In my opinion, it’s almost better the next day, as all the spices and flavors have time to mix together. Enjoy!
