1.) Heat up a medium-sized pot (4-5 qt) on medium. Then add olive oil & onion. Cook until onions are translucent.
2.) Add chicken to pot. Cook for 3-5 minutes or until brown. Add carrots, ginger, cumin, chili powder and soy sauce. Cook for an additional 3 minutes.
3.) Add chicken broth. Turn to high and bring to boil. Reduce heat to low.
4.) Simmer for 15 minutes.
5.) Add kale and simmer for additional 3-5 minutes or until kale is tender
6.) Dish and serve!
