Directions:  
Preheat oven to 450 degrees
In a 9x13 casserole dish, spread a thin layer of the barbecue sauce
Place chicken thighs in a single layer in the dish
Pour about 3/4 cup of the barbecue sauce over the tops of the chicken
In a large mixing bowl, toss all of the chopped vegetables and fruit with about 3/4 cup of barbecue sauce until evenly coated
Pour vegetable mixture over the top of the chicken in an even layer
Cover casserole dish tightly with foil and cook for 35 to 45 minutes until chicken is cooked through to 180 degrees
Serve chicken and vegetable mixture over rice. Spoon sauce over chicken to taste.
