place roast in 6 qt crockpot

chop or puree the veggies, and add all ingredients EXCEPT rice to crockpot.

cook on low 12 hours, or high 8 hours or until falling off the bone.

dip out 4 cups of liquid and put in sauce pan with rice. bring to boil, cover and reduce heat to simmer for an hour.

shred pork, discard the bone.

add rice back into crockpot.

serve with tortillas and cheese.
