Description: From: Cooking Light the fresh food fast cookbook Didn't have Pine Nuts so I used sliced Almonds. I also added 2 Large mushrooms and used less salt.
Ingredients:  Makes 4 servings (3 cups)
2  teaspoons
1/8  teaspoon
1/4  teaspoon
2  tablespoons
2  teaspoons

Preheat oven to 450f.
Combine first 5 ingredients on a rimmed baking sheet with parchment paper.
Bake for 15 minutes or until browned and almost tender. Add almonds. Bake an additional 2 minutes or until almonds are toasted. Drizzle lemon juice just before serving. Yield: 4 servings (serving size: 3/4 cup).
