Place potatoes and onion in a 4 to 5 quart slow cooker. Top with flank steak pieces. In a medium bowl combine broth, hominy, tomatoes, chili powder, garlic, salt, and cumin. Pour over meat; cover and cook on low-heat setting for 7 hours.

If using low-heat setting, turn cooker to high-heat setting for 30-60 minutes or until cabbage is tender. Transfer meat to a cutting board. Using two forks, pull meat apart into shreds. Return shredded meat to cooker. Serve topped with queso fresco, cilantro, and lime wedges. If desired, garnish with sliced hot chile peppers.
