Directions:  
Cover the lentils with water in a medium saucepan. Bring to a boil, reduce heat and cook until tender, about 20 minutes. Drain and set aside. Meanwhile, saute the onions in the oil and sprinkle with the salt, until they slightly caramelize, about 10 minutes. Add the garlic, sun-dried tomatoes (I soaked these for 5 minutes first, then drained and chopped them), paprika, oregano and tamari. Stir and cook 2-3 minutes, then add the lentils and blend.
Place all ingredients on the table, with spicy lime slaw (see separate recipe) and allow each person to build their own tacos.
