Directions:  
Microwave mozzarella in medium glass bowl, until melted. Allow to cool 30 seconds. Gently fold in the egg yolk, until completely combined.
Scrape onto a parchment-lined baking sheet. Place another parchment paper on top, and press down with your hand until the dough is thin, or use a rolling pin.
Refrigerate until top parchment can be lifted cleanly (about 10-15 minutes)
Cut dough into strips (like linguine). Place on drying rack and in the refrigerator at least 4 hours (or overnight).
Place pasta into boiling water for 1 minute. Drain into colander and rinse with cold water, to prevent sticking. Serve with your favorite sauce.
