Zucchini carbonara

2		medium Zucchini,s spiralized
1/4  cup		Parmesan cheese
3  ounces		Prosciutto
1		egg
1  teaspoon		olive oil

Spiralized the zucchini & lay on paper towel. Cover with a light layer of salt & toss. Let rest for 5 minutes and then blot with paper towels to remove excess moisture. Place olive oil in pan and gently brown prosciutto until crispy. Add zucchini and cook slightly. Mix egg with cheese and add to zucchini/prosciutto mixture. Cook for 5 additional minutes and Steve immediately.
