Directions:  
melt butter in large, deep pan
add finely chopped onion and garlic
add sherry
whisk in the flour until everything mixed into a paste
add chicken stock
bring to a low boil
reduce heat and add half and half... bring back to slow boil
add chopped broccoli and cheddar cheese
bring heat back up to medium and stir until boiling
reduce heat to low and let simmer 5-10 minutes
