Directions:  
peel eggplant and slice in 1 inch slices
dip slices in beaten egg
dredge in mixture of panko, paresan, and Italian seasoning mixture
Place on cookie sheet, mist with olive oil
back for 35 minutes at 350. heat tomato sauce and serve with sauce and spaghetti noodles.
