Combine eggs, pepper, and cheese in small mixing bowl. Stir with a fork until yoke and egg whites are blended.
Chop 1/8 cup each of Green Bell Peppers and Red Bell Peppers. Set aside.
Heat large saucepan or griddle, spray with cooking oil.
Pour egg mixture onto pan.
Add bell peppers.
Once the bottom of the mixture has cooked, fold the omelet over on to itself.
Cook on each side until done.
