BP's Chicken Vegitable Soup

1/2  serving		chicken cut-up
1/4  cup		zuccini chopped 1 inch squares
1/4  cup		sweet onion diced
8		cherry tomatoes
4		stalks of celery sliced
4		white mushrooms
3-1/2  cups		Swanson's vegitable broth
1  teaspoon		virgin olive oil
1  teaspoon		salt
1  teaspoon		pepper
1  tablespoon		soy sauce
1  tablespoon		wochester sauce
2		cloves of garlic
1  teaspoon		bay leave
3-1/2  cups		Dole Baby Spinach - Fresh

1.) in large pot place one teaspoon olive oil and brown chicken over high heat
2.) when chicken is brown add onions and all the other veggie ingrediants
3.) pour 3 1/2 cup veggie broth and season soup to taste
4.) bring to hard boil for 20 minutes and low simmer for the for the remainding hour. Besure veggies do not get super soft and break apart.
5.) ladel into bowl and serve
