Place rack in center of oven

Preheat oven to 350 degrees F

Whisk together flours, baking soda, cinnamon, nutmeg, and salt in a medium-sized bowl.

Beat butter, oil, and sugars in large mixing bowl scraping down the sides as necessary for 1 minute.

Add egg, carrot puree, and vanilla and beat an additional 30 seconds.

Add flour mixture an additional 30 seconds.

Add oats, flakes, raisins (or other dried fruit) and toasted nuts (may be substituted for different nuts) and mix at low speed just until mixed. (Dough will be slightly sticky, less than traditional cookie dough)

Line a large cookie sheet with parchment paper

Use 3-4 tablespoons of batter to form a ball and place on cookie sheet.

Repeat with remaining batter, leaving three inches between cookies.

Wet hands and flatten slightly, to 1/4 inch thick.

Bake for 12 minutes.

Let cook, transferring to wire cooking rack
