Directions:  
Toad and squeeze excess water from spinach. In a food processor mix mushrooms, spinach, two garlic cloves, and half white onion; roughly chop all ingredients. Place mixture in a bowl add oregano, paprika, salt & pepper and with a spoon mix well to blend in all the spices; set at side.
Cut chicken breast in to four thin slices, cut each slice of provolone cheese in half and layer over each slice of chicken breast. Add one tbls of the spinach mixture to each slice of chicken breast and roll the secure with a toothpick. In a bowl mix your egg white and fat free milk, in a plate place your bread crumbs. Dip your chicken rolls in the egg white mixture remove and place them on bread crumbs covering all parts of the chicken. Spray a pan with non-stick spray and place chicken rolls sprinkle one table spoon of parmesan cheese over your chicken rolls; bake at three hundred fifty for thrirty minutes.
Place your romaine lettuce and chopped parsley in a bowl and place in refrigerator. In a small bowl mix lemon juice, olive oil, two cloves of garlic (finely chopped) mayonnaise, water, salt and pepper mix well and pour over romaine lettuce when ready to serve sprinkle salad with parmesan cheese. Place a chicken roll in each plate add salad and enjoy.
