Heat large pot with olive oil.

Chopped onions (not diced), garlic, and boiled potato add to pot

Sautee on med/high, do not let brown, add water or broth to keep from sticking

Sautee until very well cooked, but not browned.

Add 4 cups of veg broth, thyme, allspice.

Continue for about a total of 20 minutes

Blend with a immersion blender

Add water for desired constistincy

Add nutmeg and simmer for about 5 min
