First heat olive oil in pan

Add onion and mushrooms and sautee until done - add salt and pepper to taste

Remove from pan and let cool

add frozen chopped spinach

cover with lid and cook until defrosted and liquid is evaporated, season with salt, pepper, and nutmeg and remove from heat and let cool

add egg whites and mix together

add spinach, mushrooms, onions and mix together

pour into a large deep dish pie pan and put in oven at 375 degrees

cook for 45-60 minutes until knife inserted in middle comes out clean

Cool and put in refrigerator. Slice into 6 pieces and cook 1 piece for breakfast in the microwave.
