Directions:  
Preheat broiler. Place eggs in a bowl, beat lightly and season with salt and pepper. Spray an 8 inch cast iron skillet with cooking spray and place over medium heat. Pour in eggs and cook, undisturbed until eggs are set, about 5-7 minutes. Sprinkle tuna, scallions, and parmesan over eggs, place under the broiler until puffy, about 1 minute (be careful not to burn!) Remove from heat and cut into wedges and serve.
