Mix pudding according to box instructions using cold milk and put in refrigerator until ready to use.

Meanwhile, whip (by hand or with electric mixer) whipping cream with confectionary sugar and vanilla until forms medium to stiff peaks. Divide evenly between pudding mixes and stir into pudding.

Line the bottom of a 13x9 pan with graham crackers (whole, not crushed). Then a layer of one of the pudding mixtures. Repeat with graham crackers and the remaining pudding mixtures until you have three layers. Decorate with cut up fruit if you wish (bananas, strawberries work well). You can also place some within the various layers if you prefer.

Put in freezer for about 4 hours. If longer, let thaw slightly to ease cutting.
