Directions:  
Preheat oven to 375. Heat oil in a large skillet over medium heat. Add onions and cook for about 3 minutes. Add mushrooms and cook for another 5, or until lightly browned. stir in Bacon, Spinach and Chilis until spinach is heated thoroughly. If any water accumulated in pan drain it off carefully.

Divide the mixture amoung 4 6-oz ramekins that have been lightly greased. Carefully crack an egg into each, making sure to keep the yolks intact. Place the ramekins into a baking dish and bake until the whites are firm but the yolks are runny, about 10 minutes.

Serve with salsa and hot sauce if desired.
