Preheat oven to 425 degrees. Spray muffin tin cups with Pam or line with paper baking cups.

Place dry ingredients in large bowl and mix

Add 1 can pineapple with juice. Drain 2nd can, add pineapple only, and discard juice from 2nd can. Add milk, egg, and coconut oil. Beat with hand mixer until all dry ingredients are incorporated.

Fill cups with batter. Bake 17-20 min, until toothpick inserted in center comes out clean. Let cool in pan 5 min, than cool completely on wire rack.
