Description: I make these pita rounds small and use one whole one to fill. You could make them larger and cut them in half. I have also tried this with 1/3 of the flour being whole wheat and it does turn out. More that that they don't rise correctly.
Ingredients:  Makes 16 servings (16 pieces)

Directions:  
Mix the yeast with the one cup of warm water and honey. Set aside to proof.
Measure out the flour and salt.
Mix the proofed yeast and honey mixture into the flour.
You may have to add up to another cup of warm water to get the correct texture.
Kneed for 5-10 minutes.
Cover with cloth and let rise for one hour.
Divide the dough into 16 little balls.
Flatten the balls with a rolling pin and set aside for a few minutes. Then turn them over and roll them out again.
Cover with towel and let rise for 45 minutes.
Heat over to 450 also a cookie sheet.
Place rounds on the cookie sheet so they do not touch each other or the side of the cookie sheet.
Cook on the lowest rack of the over for 5 minutes.
Move up to the highest lever and cook another minute.
