Directions:

In a mixer bowl, combine 2 cups flour with very warm water, sugar and salt.

Using a dough hook attachment, keep adding flour up to 6 cups to make a dough that no longer sticks to the bowl.

Turn out on floured surface and knead until smooth and elastic

Let rise in warm place in a bowl, covered with a damp towel, for 45 minutes

Punch dough down, divide in half, and shape into loaves (or put in loaf pan) on parchment paper on a sheet pan.

Cover with a wet towel and let rise for 30 minutes.

Preheat oven to 375 degrees F

Beat one egg white with 1 tbsp water and brush on loaves.

Make a few cuts across the tops of the loaves

Bake for 20 minutes, brush with egg mixture again, bake for another 15 - 20 minutes
