BWH Keto Chocolate Cheesecake

1  cup		cashews ground
1/2  cup		coconut flour
4  tablespoons		melted butter
16  ounces		cream cheese
1  cups		3 Tbsp. Erythritol
2  teaspoons		vanilla
1/2  cup		cocoa powder
2		eggs
1  cup		sour cream

For crust: Mix ground cashews, coconut flour, melted butter, and 1 Tbsp. Erythritol. Spread in bottom of cheesecake pan. Bake at 350 for 10 min.

For Filling: Blend cocoa powder, 1 cup erythritol, cream cheese, I tsp. vanilla, and eggs. Fill crust and bake at 375 for 20 min. Remove and let cool for 15 min.

Topping: Mix sour cream, 1 tsp. vanilla, and 2 Tbsp. Erythritol. Spread evenly over filling. Bake at 425 for 10 min.

Refrigerate for 2 hour before serving.
