Directions:

slice eggplant lengthwise, brush on olive oil, salt and pepper both sides. Face down on a cookie sheet and bake at 425 degrees for 45 minutes.

smash garlic and pour a bit of olive oil and add a fresh sprig of rosemary, wrap in foil and put in oven and bake for about 30 minutes.

scoop eggplant from skin and chop. Put eggplant and garlic into a big pot minus cooked rosemary. Get a fresh sprig of rosemary, finely chop and add to pot. Open all the cans and pour into pot, add chicken stock. Season to taste.

Brown ground beef in another pan, drain and add beef to sauce. Adjust seasonings as needed.

Boil pasta of choice and top with freshly grated parmesan cheese.
