Green Eggs & Ham

16  ounces		Ham
2  ounces		Crimini Mushrooms
2  ounces		Baby Spinach
1  ounce		Scallions
1  tablespoon		garlic
2  teaspoons		olive oil
2  tablespoons		2% milk
1  ounce		Salt & Pepper to taste
2		Large Eggs - Raw
4		large egg whites cooked

Heat up saute pan with oil, add garlic. Let sizzle add scallions then mushrooms cover with lid and sweat out.

Make egg mixture 4 egg whites & 2 whole eggs and milk whisk

In regular cupcake tin (use non stick and spray with Pam), place ham in cup shape, add 1 Tbsp spinach and mushroom mixure on top. Pour 1/4 c of egg over this. Pop in the oven 375 degrees for 17-20 min

Let set for a few minutes and remove from Pan with large spoon
