Brown two pieces of turkey bacon until crispy. Drain off the grease and crumble into pieces.

Stab the potato with a fork and heat in the microwave until cooked and soft all the way through. It took me 5 minutes, but my potato was small and the microwave is very strong! Once the potato is cooked, remove the skin and mash the potato in a small bowl. (Be careful! Mine was extremely hot!)

Pour one cup of 2% milk and one cup of water into a medium-sized pot over medium heat, stiring occasionally. After about 5 minutes, start adding ingredients to the soup while whisking.

Add 1/4 cup mozarrella cheese.

Add 1/4 cup greek yogurt.

Add mashed up potato.

Add bacon pieces.

Add 1 1/2 Tbsp of flour

Add a dash of sea salt and a dash of black pepper. (I did not measure how much I used,
but I suggest adding small amounts at a time and tasting it to see if it is how you like it.)

Turn the heat up to medium-high while continuing to whisk the soup as it starts to thicken. Once it starts boiling, turn the heat down to low and let simmer for 5 minutes.

Top the soup with green onions and it's ready to serve! (Careful, it may be hot!)
