Description: Tastes just like the potato soup mom used to make but using Cauliflower instead of Potatoes lowers the Carb and Calorie count considerably.

Directions:  
Quarter the onions and cut the celery into fat slices. Break the cauliflower into florets. Put all ingredients into pot. Bring to a boil. Turn down the heat to medium low. Let simmer for about 20 to 30 minutes, until the veggies are soft. I use an immersion blender to "cream" the soup. You can also do the same in batches in a blender. Adjust the flavor to your liking... If you don't mind the fat, you can add Cheese and a little butter. If you're watching your fat, then I just use a little I can't believe its not butter spray. Also good with Chicken Breast and a little pepper sauce.
