Salty Cajun Roasted Cauliflower

1  tablespoon		coconut oil
1		large cauliflower
2  tablespoons		handful fresh chives
1  teaspoon		sweet smoked paprika
1  teaspoon		oregano or thyme
1/2  teaspoon		cayenne pepper
1  teaspoon		garlic powder
1  pinch		sea salt and black pepper

Preheat oven to 475 and put the coconut oil on a large baking tray in the oven for a few minutes until melted. Mix the spices and all other ingredients. Remove hot tray and add the cauliflower and spices. Toss until evenly coated. Spread out on the tray and roast for 30-40 minutes, tossing at regular intervals. Serve with an extra sprinkling of sea salt and homemade ketchup or tomato chutney on the side.
