Directions:

Blend flour/oil cold until smooth. Heat over medium heat to make roux. Careful, it burns quickly. Needs to be about as brown as peanut butter.

Add chopped vegetables and sautee a bit. Recipe says 10 minutes, but I only go about five. The thing's going to simmer for 45 minutes for pity sake.

Add tomato sauce, followed by beef broth and wine/water.

Add herbs, salt and pepper.

Simmer, covered, for 45 minutes

While sauce simmers, peel shrimp. de-vein and remove tails.

After 45 minutes, add shrimp and simmer 20 minutes longer.

Serve over steamed rice. Crusty bread very good with this recipe.
