Place meat in slow cooker; top with vegetables and 1 Tbsp. thyme.

Add broth and water; stir. Cover with lid. Cook on LOW 6 to 8 hours (or on HIGH 3 to 4 hours). About 15 min. before serving stroganoff, cook noodles as directed on package, omitting salt.
