Description: Pasta shells stuffed with ricotta and mozzarella

Cook pasta until al dente, then rinse and allow to cool until able to handle comfortably

Mix ricotta and mozzarella (reserve about 1/3 for topping) in a bowl. Add basil, parsley or spinach if desired.

Place about 1/4 cup of sauce on the bottom of an aluminum tray or roasting pan. Take a pasta shell and fill with a spoonful of cheese mixture. Place face up in tray. Should be at least 3 inches deep so that shells are below the lip of tray. Continue with remaining shells until tray is full.

Pour remaining sauce over shells and top with reserved mozzarella.

Bake at 350 degrees F for about 30 minutes.
