Directions:

Drain and rinse chickpeas. Place on a paper towel to dry. Remove the skins to make a more smooth cookie dough.

Add chickpeas, peanut butter, vanilla extract, maple syrup (or honey or a mix of honey and maple syrup) and cinnamon to a food processor. Blend until smooth and creamy.

Add ground chia seeds to the mixture and blend (to get ground chia seeds use a coffee grinder or a mortar and pestle).
