cook boneless skinless chicken breasts: put 6 cups of cold water (filtered is best) and 2 tsp of salt and the chicken in a dutch oven, turn on heat to medium and let the water come up to 170 degrees, this takes 10-12 minutes so start checking temp at 8 minutes then every minute thereafter, once 170 is reached remove from heat, cover and let set for 15 minutes. chop celery, sweet pepper and onion and place in a large mixing bowl.

once chicken is cool, cube it and add to bowl

add mayo and mustard, fold/stir till blended.

chill for at least an hour for flavors to blend, add salt/pepper to taste.
